Chocolate sauce

This Chocolate sauce recipe was handed down from my mother-in-law.  It is always served at Rappleye extended dinners when ice cream is served for dessert, which is almost every time there is a family dinner!  I think after you have this on your ice cream 
you will never, if at all possible, buy the 
chocolate syrup in the plastic bottle again!  

4 T. butter
2 T. cocoa
1 Scant c. canned evaporated milk (7/8 c.)
1 c. sugar
2 T. Karo
1 tsp. vanilla

In a medium sauce pan, melt butter; add cocoa and
 stir until dissolved. 




Add milk, sugar and Karo.
(scant means a little less than a cup, like this.)




 Stir until it comes to a boil.  



Turn heat down a bit so it doesn't boil over 
and boil 2 minutes without stirring.

Remove from heat and stir in vanilla.  


 Let sit 10-15 minutes if you can!
   Serve over ice cream.



You may want to skip the ice cream and just grab a spoon!
 Woohoo!

Fresh Salsa

When my friend Emma who is from Mexico was teaching me how to make Taquitos, she asked me if I had salsa to put on them.  
I reached in the fridge and pulled out my store bought bottle of salsa.  I wish I would have had my camera in my hand because the look on her face was "New York City?  get a rope!" LOL!  She then politely said "that's not REAL salsa!" hahaha!   I'm so glad I had the fake stuff so  I could be shown the right way to make it.  I think you will love the fresh ingredients and just how easy and
 fun it is to make!

2-3 Roma tomatoes
1 clove garlic
1-3 dried Arbol chilies, find in Latin food section  
3/4 tsp. salt

Place tomatoes in a skillet and roast to loosen skin. Keep turning to roast evenly.  My tomatoes are not completely red and that is OK!



When Tomatoes are almost done, add peppers to skillet to roast.  These will only take 1-2 minutes for the peppers to roast. Remove peppers and set aside.

Using a fork to hold the tomato scrape the skin off 
of the tomatoes.


Peel garlic and place in a blender with tomatoes peppers and salt.  
Blend until pureed.



Remove stem from peppers before adding to blender.







Serve over Taquitos or any other Mexican dish.

Green Sauce (for sweet pork)

You will enjoy this sauce or dressing on a salad or burrito loaded with pulled sweet pork! 

1 pkg. Hidden Valley Buttermilk Dressing mix
2 T. salsa verde
2 cloves garlic
1/2 bunch cilantro
1/2 c. buttermilk(or drinkable plain yogurt)
3/4 c. mayonnaise
Juice of 1 lime
1 dash of hot sauce or to taste

Place all ingredients in a blender and blend until smooth.


salsa verde........

Ranch dressing .......

 garlic........

Cilantro .........

buttermilk or yogurt........ 
(I used drinkable plain yogurt)

mayonnaise ........

lime juice....... 

hot sauce.......

blend until creamy..... 

 Serve......


The garlic and lime give this dressing such a great flavor that adds a punch to pulled pork burritos and salads.  
Be sure to store in air tight container in the refrigerator.

Spaghetti Sauce


I was talking to one of our sons today and he was telling me how nice he thought my blog was (had to give myself a pat on the back there!) and he said it would be nice to have some simple basic recipes posted.When he was first married he didn't know how to make a simple spaghetti sauce from scratch. (He makes great sauce now!!)  So, I decided to have spaghetti for dinner tonight.  This is a basic recipe which I think stands on it's own very well, but if you felt like you wanted to add any of your favorite herbs or spices to it, you could. I would encourage you to make it the way it is first and then go from there because I really think you will love it!  I can't wait until tomorrow for the left overs...it's always better the next day!!


1 lb. hamburger
2 (6oz.) cans tomato paste
1 (14 oz.) can beef broth plus enough water to measure 3 c. liquid
2 T. dry minced onion
1 T. dry parsley flakes
1 T. brown sugar
½ tsp. salt
1/8 tsp. pepper
½ tsp. garlic powder
1 tsp. Italian seasoning
 1(4 oz.) can sliced mushrooms
Parmesan cheese

Brown hamburger first


and add the rest of the ingredients except Parmesan and simmer for 30 minutes


 




 Serve over hot cooked spaghetti noodles and top generously with Parmesan.


 I ate way too much!!!  :0)
I served this sauce over wheat pasta and it was delicious!!
