The first time I ate this rice I was expecting plain white rice, when a sweet blast of coconut rushed over my taste buds! Thanks to my friend Patricia from Colombia, I now make this rice often and share it so others can enjoy a new way to dress up white rice in a quick and easy way.
2 c. rice
1(10.5 oz.) can coconut milk
2 cans water
1/2 tsp. salt (I have made this with out salt and still liked loved it!)
1 snack box size raisins or 2 T. (opt)...I added the raisins for the pictures but I'm the only one in my family that likes raisins so I usually do not add them....I guess I get this whole pot of rice all to myself this time...darn!
Place all ingredients in a medium sauce pan and bring to a boil.
Don't forget the salt!!
Give it a little stir
Turn heat to low and cover pot with lid.
Simmer 20 minutes............
Remove from heat, stir gently and serve!
